Banana Nut Cake
Banana Nut cake recipe is one that has been handed down from generation to generation. For most of us who love banana and purchase by the dozen, know that at some point, bananas tend to become over ripe. Instead of throwing them out, they can be used to make at tasteful cake.

Preparation Time: 20 minutes Cooking/Baking Time: 1 hour

INGREDIENTS
2 1/2 cups cake flour
1 1/4 tsps. baking powder
1 1/4 tsps. baking soda
1 tsp. salt
1 1/4 cup granulated sugar
2/3 cup soft margarine
2/3 cup *sour milk
1 1/4 cups mashed ripe bananas (about 3)
3 medium eggs
2/3 cup peanuts, chopped

METHOD

1. Preheat oven to 350°F / 180°C.
2. Grease and flour 2 layer cake pans 22cm×2.5cm / 12"×1" or 1 oblong pan 35cm×22cm×4cm / 16"×12"×1 1/2''.
3. Sift together flour, baking powder, baking soda and salt.
4. Add to flour mixture, sugar, soft margarine, 1/2 of sour cream and mashed ripe bananas.
5. Beat until smooth scraping sides and bottom of bowl constantly.
6. Add eggs and the rest of sour milk, continue beating vigorously for about 2 minutes with an electric mixer or for 5 minutes beating by hand.
7. Fold in chopped nuts. Pour mixture into prepared pans and bake if layered for 35 minutes, (45-50 minutes if using an oblong pan) or until skewer inserted in the center comes out clean.


Serving Suggestions:
Decorate with your favourite icing.

Notes:
*Sour milk: Add 1 teaspooon lime juice or 1 dessert spoon lemon juice to 1 cup fresh milk.
